Instructions
1. Make the noodles
In a mixing bowl, combine flour, eggs, salt, vegetable oil, and water. Knead the dough for 10 minutes until it becomes smooth and elastic. Let the dough rest for 30 minutes. Roll the dough into thin sheets and cut into thin noodles. Boil the noodles in a pot of boiling water for 2-3 minutes until they are cooked. Drain and set aside.
2. Make the filling
In a frying pan, heat vegetable oil over medium heat. Add onion and garlic and sauté until fragrant. Add ground chicken, salt, sugar, and black pepper. Cook until the chicken is no longer pink. Set aside to cool. Take a small piece of noodle dough and flatten it into a small circle. Place a spoonful of filling in the center of the circle. Pinch the edges of the circle to seal the dumpling. Repeat until all the filling is used.
3. Make the broth
In a pot, heat chicken broth, garlic, onion, salt, sugar, white pepper, and sesame oil. Bring to a boil and let it simmer for 10 minutes.
4. Serve
Divide the cooked noodles into bowls. Add the dumplings and pour the hot broth over them. Garnish with spring onion and fried shallots.
