There are many different types of ramen broth, but the most popular are shoyu, miso, and tonkotsu. In this article, we will share with you the recipe for making kuah ramen, which is a tonkotsu-style broth.

– 1 kg pork bones – 2 liters water – 3 cloves garlic, smashed – 2 shallots, sliced – 1 thumb-sized ginger, sliced – 2 tbsp soy sauce – 1 tbsp fish sauce – 1 tbsp sake or rice wine – 1 tsp salt – 1 tsp sugar – 1 tsp black pepper – 1 tbsp vegetable oil

1. Clean the pork bones thoroughly and blanch them in boiling water for 5 minutes. Drain and rinse under cold water. 2. In a large pot, heat the vegetable oil over medium heat. Add the garlic, shallots, and ginger, and sauté until fragrant. 3. Add the pork bones to the pot and fill it with water. Bring to a boil and then reduce the heat to low. 4. Simmer the broth for at least 6 hours, or until the bones are very soft and the broth is milky white. 5. Skim off any impurities that rise to the top of the broth. 6. Add the soy sauce, fish sauce, sake, salt, sugar, and black pepper to the pot. Continue to simmer for another hour. 7. Strain the broth through a fine-mesh sieve and discard the solids. 8. To serve, reheat the broth and pour it over cooked ramen noodles and toppings of your choice.
