Introduction

Nasi Kuning Manado is a traditional dish from North Sulawesi, Indonesia. It is a fragrant and savory yellow rice dish that is commonly served during special occasions such as weddings and religious ceremonies. The dish gets its yellow color from the turmeric used in the recipe.

Ingredients

To make Nasi Kuning Manado, you will need the following ingredients:

  • 2 cups of rice
  • 3 cups of water
  • 1 turmeric root (grated)
  • 3 kaffir lime leaves
  • 1 lemongrass (bruised)
  • 2 bay leaves
  • 1 teaspoon of salt
  • 1 tablespoon of cooking oil
  • 3 shallots (chopped)
  • 2 cloves of garlic (chopped)
  • 3 red chilies (chopped)
  • 2 tomatoes (chopped)
  • 1 cup of water
  • 1 teaspoon of salt
  • 1 teaspoon of sugar
  • 1 teaspoon of chicken powder
  • 2 tablespoons of cooking oil

Instructions

Making the Rice:

  1. Wash the rice, and drain it in a colander for 10 minutes.
  2. In a pot, sauté the grated turmeric, kaffir lime leaves, lemongrass, bay leaves, and salt for 1 minute.
  3. Add the rice and sauté for another 2 minutes.
  4. Add 3 cups of water and bring to a boil.
  5. Reduce the heat to low, cover the pot, and let it simmer for 20 minutes or until the rice is cooked.
  6. Turn off the heat and let it sit for 10 minutes before fluffing the rice with a fork.

Making the Sambal:

  1. In a pan, heat the cooking oil and sauté the shallots and garlic until fragrant.
  2. Add the chopped red chilies and sauté for another 2 minutes.
  3. Add the chopped tomatoes and sauté for another 2 minutes.
  4. Add 1 cup of water, salt, sugar, and chicken powder.
  5. Simmer for 5 minutes or until the tomatoes are soft and the sauce has thickened.
  6. Turn off the heat and let it cool down.

Serving:

  1. Place the Nasi Kuning on a serving plate.
  2. Top it with the Sambal.
  3. Serve with fried chicken, fried tofu, and sliced cucumber.
